East Asian cake culture - the style you find in Seoul, Tokyo and Shanghai - approaches a celebration cake completely differently to the British tradition. The sponge is lighter, the cream is barely sweet, and the decoration is restrained rather than elaborate. At Danine Cakes in Streatham, South London, we make that style to order, rooted in the Korean patisserie technique our founder grew up with.

Less sweet by design

East Asian patisserie treats sweetness as a background note. Silky, lightly sweetened creams instead of the heavy sugar of a typical Western celebration cake.

Cloud-light texture

The cotton sponge comes from an East Asian chiffon method - whipped egg whites folded through a light batter and baked low and slow, so it stays airy rather than dense.

Minimalist restraint

No thick fondant shell and no clutter. Clean buttercream, a ribbon, a single flower, hand-piped script - the craft is meant to be the decoration.

A traditional British celebration cake leans on fondant, dense sponge and sweetness. Across East Asia the emphasis sits somewhere else entirely: on texture and balance. The cake should feel light enough to finish a second slice, and look considered rather than decorated.

East Asian, not South Asian

In the UK, “Asian cake” often means South Asian - the Indian, Pakistani and Bangladeshi tradition of mehndi and nikkah cakes, with flavours like saffron, cardamom and pistachio and richly ornate decoration. That is a beautiful craft, and it is not the one we practise.

Danine Cakes makes East Asian cakes: Korean, Japanese and Chinese-influenced, built on light cotton sponge with lightly sweetened cream and a minimalist finish. If that is the style you are picturing, you are in the right place.

Bespoke, not off the shelf

Most East Asian cake shops in London are walk-in patisseries selling ready-made cakes and slices. We work the other way around: every cake is designed with you - flavour, shape, colours, lettering - and baked to order in our Streatham studio.

There is a difference between a bakery that adds one Asian-inspired cake to its menu and a studio where the East Asian approach is the starting point. Every cake here is made by Shinhye, who learned these techniques in Korea and brought them to Streatham - the cotton sponge method, the less-sweet cream, the restraint in how a finished cake is presented.

It also means the details are right: piping done by hand, Korean ingredients sourced directly rather than substituted, and a finish that stays understated even on a big celebration cake.
